Matcha tea, apple and lime tiramisu

Cake base:
5 egg whites
3 egg yolks
85 g. of flour
1 teaspoon Cornstarch
75 g. of flour
Icing sugar for sprinkling
Matcha tea syrup:
250 ml. of water+50 ml. of water
100 g. of sugar
7 g. of matcha tea
Mascarpone cheese cream:
250 g. mascarpone Quescrem 0% lactose
200 ml. 0% lactose cream
3 egg whites
2 tablespoons of sugar
Add ons:
2 Granny Smith apples
2 limes
Cake base: Preheat oven to 200 °C. Prepares a French meringue, beat the egg whites with sugar water until they are firm. Stir in the egg yolks. Sift the flour with cornstarch and add into the mixture. Pour batter into a pastry bag with a round nozzle and, on a baking paper, make strips of dough (attached to each other). Bake for 8-10 minutes.
Matcha tea syrup: Prepare a Swiss meringue, heat egg whites (bain marie) with sugar until you touch and see sugar has dissolved and you can’t see it. Pour the egg whites into a bowl and whip until stiff. Mix the mascarpone Quescrem 0% lactose with the cream (not whipped)
and add this mixture while enveloping, to the Swiss meringue. Store in the fridge.
Syrup: Prepare a matcha tea infusion with 50 ml. water and 7 g of tea. Heat the 200 ml. of water with sugar until it reaches 80 ° C. Add the infusion of matcha tea and let stand and cool down.
Arrange on a ladyfinger base soaked with matcha tea syrup. Alternate mascarpone Quescrem 0% lactose with Granny Smith green apples on top. Finish with a dollop of cream and lime zest above.
